Criollo is true to its name in Spanish, which means 'Creole' and brings that mixture of culture and flavors to their menu. Inside the kitchen, most of the dishes are inspired by the Caribbean, but it also draws influence from Mexico and South America as well. The creativity is highlighted throughout the menu, for instance, the Salmon Tostada and Bavette Steak are two interesting dishes that mix flavors from Cuba, Mexico and Argentina. Definitely a nice place to visit, when you seek something outside of the norm.
When describing Tinderbox Kitchen, organic, local and sustainable are words often used. In fact, the tasting menus just use the ingredient itself as the centerpiece. For example, the charcuterie board may have different cheeses, but the accompaniments like the apples, crostini, simple greens and dressing could all stand strong by themselves. Entrees include scallops, steaks, duck and venison as well as what is in season. The menu is an illustration of Chef Tony Cosentino's exquisite creations rooted to local flavors and highlighting fresh ingredients. Favorite menu items include the green chili tamale gnocchi, diablo shrimp macaroni and cheese, and Josephine’s pot pie.
