Starting out during World War II from Maximo Gimenez's home where he invited his fellow G.I.s to drop in for lunch, Max's has now become a worldwide chain of restaurants. The recipe for the famous fried chicken served here was, in fact, conceptualized by Max's daughter Ruby and the rest, as they say, is history. Today, Max's has more than 10 branches in America of which the branch in Jersey City is one. The restaurant is known for its authentic Filipino dishes, platters, combos and, of course, their fried chicken.
