On weekend he is a different person - he spends time playing for the local rugby team. Visit the brewery and Nakao will personally point out all details of the seasonal subtleties involved in brewing the Daiginjo and Ginjo sakes. And if you end up getting a bit friendlier with him, he might just gift you one of his treasured beers.
