"Franco-Japanese Fusion Pastry"
Paris is famous for its bakeries, but at this pâtisserie, French treats are blended with another cuisine famous for its sweets: Japan. Born in Tokyo and trained in both France and Japan, Sadaharu Aoki blends the best of both sets of flavors and techniques in his beautiful shop, more reminiscent of a jeweler's than a bakery. Pale green macarons are not pistachio but matcha-flavored. Cakes come in traditional chocolate and vanilla flavors, but also in surprising red bean paste. The technique of Paris' best pâtissiers is apparent from the moment you look at the clear, glass case, but the flavors are a clever mix of ingredients from both nations. -Emily Monaco
