Fonda Comida Mexicana is the brainchild of an esteemed chef Roberto Santibañez, a Parisian Le Cordon Bleu International trained chef. And as a student from one of the world's most reputed culinary schools, Roberto applies his traditional techniques to the recipes from his grandmother's cookbook. At Fonda the flavors mostly hail from Mexico City, with items like Huevos Divorciados (Divorced Eggs) and Salmon en Pepita, which is encrusted with pumpkin-seed and served over white wine asparagus. With two other locations, one in Chelsea and the other in Park Slope, it is no wonder why Mr. Santibañez is taking NYC by storm.
