Inner-city Sydney might not be the first place you'd look for a slice of the Wild West, but it's just what the owners of Shady Pines are offering. Hidden down an alley behind busy Oxford Street, with no signage, it may be a little hard to find, but the extra effort is worth it. Once inside you'll be instantly transported to a time and place far away. Stuffed animal heads look over a room full of simple wooden tables that would be perfect for a card game. Of course for the full experience, take your place on a stool at the bar and tackle one of the many whiskeys on offer.

Lobo Plantation is a sleek bar decorated with classy, wooden furniture and cane seating. The wine menu is extensive and the bartenders are popular for their swift service and delicious cocktails. The food menu is limited but scrumptious. The pricing is on the heavier side, however, the ambiance and drinks make it worth the penny.

After opening up one of Darlinghurst's first small bars, Pocket, and soon after making a move to the CBD with Stitch, it would make sense that the next bar for this successful team would be called Button. Behind an unmarked door on Foveaux Street in Surry Hills, you'll find a small place that's been given a bit of a pirate ship theme. Slide into a leather booth and you'll be surrounded by plenty of timber, hanging lanterns and even rum barrels. It might be tempting to go for the pirate's favorite, but steer yourself towards something from the excellent cocktail list.
